CRISPR for coeliacs? Gene-editing tech makes ‘wheat with safe gluten’

Gene-editing technology can be used to remove epitopes â the molecules responsible for inducing coeliac disease in susceptible individuals â from wheat, according to recent research. However, with Europeâs strict GM rules, will this make a dramatic difference to allergy sufferers?
