Faster food pathogen identification
Ensuring foods and drinks do not contain pathogenic bacteria before a product is released into the market is ideal but not always achieved. If a food is contaminated, quick, efficient pathogen detection and fingerprinting is essential in limiting the spread of foodborne disease.
Currently, detecting and subtyping pathogens are separate processes and, using standard methods, it can take up to two weeks to identify the serotype of a pathogenic Salmonella. Now, University of Georgia Center for Food Safety College of Agricultural and Environmental Sciences food scientist Xiangyu Deng has created a system that can identify foodborne pathogens in a fraction of the time taken by traditional methods.
Deng has combined the two steps through a process called ‘metagenomics analysis’.
Traditionally, the pathogen is separated from the food sample by growing the pathogen in bacterial cultures, which takes 24 to 48 hours, Deng said.
To shorten the culture process, researchers in Deng’s lab apply tiny magnetic beads coated with antibodies that pull the pathogen cells out. Then they amplify the DNA of the captured pathogen cells so they have enough DNA to sequence.
“Using a new, very small sequencing tool that’s about the size of a USB drive, we can sequence while capturing the data in real time,” Deng said.
Compared to the mainstream genome sequencer that produces sequencing data after running for a day or two, the small sequencer generates enough data for pathogen detection and subtyping in about an hour and a half, he said.
Deng tested the process on raw chicken breast, lettuce and black peppercorn samples treated with Salmonella and retail chicken parts that were naturally contaminated with different serotypes of Salmonella. In one case, a small amount of Salmonella was detected and subtyped from lettuce samples within 24 hours.
Deng’s work has been published in Applied and Environmental Microbiology.

Hygiena BAX System Rapid Pathogen PCR Testing
Hygiena’s BAX System uses the polymerase chain reaction (PCR) to detect unwanted bacteria in raw ingredients, finished products and environmental samples. It is used by food companies, service labs and government regulators.
The automated, user-friendly system is easy to operate, utilising real-time or traditional PCR assays, tableted reagents and optimised media to minimise hands-on time and free technicians for other tasks. The company claims the system is the leading PCR instrument in ISO-17025 labs worldwide.
While other methods rely on physical or biochemical properties of their targets, PCR amplifies and detects a target organism’s DNA. A target’s DNA is highly stable and unaffected by environmental stresses that can affect other detection methods. During PCR, carefully designed primers target specific genetic sequences possessed only by target organisms, eliminating expensive false-positive results. The system combines this technology with simple methods to provide clear ‘yes’ or ‘no’ results and easy-to-read amplification profiles, with no need for subjective or expert interpretation.
Features of the system include: next day result for all pathogens and high capacity load, up to 96 samples per batch; clear and reproducible results, independent of operator technique and approved workflows by AOAC, AFNOR, DAF; automated cycling, detection and analysis without the need for expert skills; simplified sample prep with only three pipette steps required; pre-packaged PCR reagent tablets provide consistency, stability and long shelf life; flexilibity with wide range of assays: Salmonella, Listeria, E. coli O157:H7, STEC, Cronobacter, Campylobacter, Vibrio. The company’s LIMS compatible system allows for easy storage, retrieval and printing; and assistance to answer questions and keep users’ operation running smoothly.

Invisible Sentinel brewLAP bacterial spoilage detection in beverages
While high alcohol/hops in craft beer can deter spoilage organisms, other carefully crafted beverages, with sometimes unconventional ingredients can be susceptible to a broad scope of microbes that produce damaging lactic acids. A major challenge for detecting beverage spoilers with traditional microbial testing is the lack of immediate, accurate and actionable results throughout the production process. These limitations make it difficult to address spoilage organisms in real time and can result in facility contamination, production inefficiencies and holds, or place finished product at risk.
brewLAP, powered by Veriflow, is a molecular platform with accuracy and ease of use for rapid detection of microbes that can produce lactic acid and impact quality. The Veriflow platform utilises DNA Signature Capturing Technology to detect and quantify Pediococcus and Lactobacillus species, with results in less than 3 h of sample collection.
The platform can be deployed on-site at any size brewery, with minimal equipment and training required.
brewLAP is available in Australia from AMSL Scientific.

Eriez Xtreme Metal Detector and ProGrade Magnets
For the most difficult food industry applications requiring the best level of protection against metal contamination, an Eriez Xtreme Metal Detector can be combined with ProGrade Magnets. This ‘double team’ enables processors to achieve maximum product purity.
Working in conjunction, the Eriez ProGrade magnets remove the ferrous contamination while the Eriez Xtreme Metal Detector focuses on non-ferrous metals such as aluminium, copper, brass and stainless steel.
The Xtreme Metal Detector is designed to achieve the highest levels of sensitivity to detect small ferrous and non-ferrous metal contaminants in sanitary and non-sanitary environments. This metal detector line has been optimised to strike a balance between absolute detection of all metal contaminants and the elimination of false signals that can slow down production.
The ProGrade line of magnetic separators are engineered to be the strongest available for the removal of ferrous and work-hardened stainless steel. Plates, grates, traps and tubes are available in various sizes and strengths to satisfy practically any food processing application. They are offered in three magnetic power levels: Ceramic, Rare Earth and Xtreme Rare Earth.
This ‘double team’ arrangement results in maximum protection with higher product yields. Together these products offer the greatest protection against unwanted metals in product or process flow, and ensure metal contamination is minimised while maximising final product quality and purity. This approach will help users avoid equipment downtime and product recalls while ensuring they remain compliant with HACCP International Food Standards.
Teaming the Xtreme Metal Detector with Prograde Magnets provides protection and offers the best defense against dangerous metal contamination.

Fortress Technology Phantom multi-aperture food metal detector
Fortress Technology has released the Phantom, a multi-aperture, multi-lane metal detector range that will assist food manufacturers to reduce factory footprint, investment and ongoing operating costs.
Featuring a single metal detector mounted across multiple food packing and processing conveyor lines, the Fortress unit is divided into individual apertures.
Since each aperture is smaller, the machine has the ability to detect metal fragments as small as 0.8 mm ferrous, 0.8 mm non-ferrous and 1.2 mm stainless steel, regardless of the number of lanes travelling through the unit. In addition, the smaller aperture copes better with orientation and product effect.
Consolidating this multi-aperture technology into one unit spanning multiple lanes, as opposed to individual metal detectors, also cuts the equipment footprint by over 50% and optimises factory floor space.
The unit also increases operational efficiencies, reducing initial capital investment costs for food processors and packers by up to 40% when compared to the purchase of individual metal detectors for each line.
With just one system to maintain and manage, a five-lane multi-aperture unit can improve total cost of ownership (TCO) by over 65% longer term, considering reduced maintenance and parts requirements.
Meat burgers, chilled salads and cakes are among the applications suited to Fortress’s multi-aperture, multi-lane technology.

Reducing acrylamides in heat-processed foods
Acrylamide can form when starchy foods are cooked or processed and it has been detected in a range of foods including fried or roasted potato products, cereal-based products (including sweet biscuits and toasted bread) and coffee. FSANZ recommends that exposure to acrylamide in food should be limited as the chemical is known to cause cancer in animals.
Estimated dietary exposures of Australian consumers to acrylamide in food found that the levels were generally lower than, or comparable to, those reported in previous Australian and international studies. Even so, the results were in the range of those considered to be of possible concern to human health by the WHO Joint Expert Committee on Food Additives.
New farming and processing techniques are being investigated to produce lower levels of acrylamide, for example, lowering cooking temperatures, using enzymes that reduce acrylamide formation and obtaining raw materials with lower reducing sugar levels. However, reducing acrylamide in some foods, such as coffee, is difficult without changing its taste.
As of 11 April 2018, new European Union legislation set new benchmark levels for the amount of acrylamide in foods for various products. Commission Regulation (EU) 2017/2158 of 20 November 2017 establishes mitigation measures and benchmark levels for the reduction of the presence of acrylamide in food.
High-heat cooking can impart potentially carcinogenic acrylamides at levels that can exceed 1000 ppb. Now Frutarom Food Protection Solutions has released an all-natural, high-antioxidant solution for reducing acrylamides in heat-processed foods, decreasing oxidation and extending shelf life.
Frutarom conducted tests on fried potatoes and other snacks applying its all-natural INOLENS 4 and SyneROX HT tailor-made formulations. Both formulations significantly reduced acrylamide concentration in the food matrices. The level of acrylamide was decreased by 60% in the snacks, and more than 90% in the fried potatoes. The research team noted that such high reduction levels are readily attainable for food applications that have very high levels of acrylamide.
The two formulations also improved oxidative stability of snacks and fried potatoes, as indicated by hexanal levels. The performance of INOLENS 4 and SyneROX HT exceeded that of the synthetic antioxidant TBHQ, which is commonly used for frying oil stability improvement.
“Using these natural formulations in baking, frying applications and other high-heat applications is an ‘all-in-one’ solution that reduces acrylamides while significantly slowing oxidation and rancidity of oils and fats and extending shelf life,” said Ohad Cohen, GM for Frutarom Food Protection Solutions.
INOLENS and SyneROX are customised blends of rosemary oil and/or water-soluble extracts in powder and liquid forms and have no impact on flavour, texture or appearance.

Woolcool insulated packaging for temperature-sensitive goods
Woolcool is an environmentally responsible insulated packaging product. Made of 100% sheep’s wool, a renewable resource that is biodegradable, sustainable and compostable, it can be used for transporting temperature-sensitive goods such as food, beverages, veterinary and human pharmaceuticals.
It comes flat-packed and reduces damaged goods due to the cushioning effect during transport.
The product keeps chilled items at the critical 5°C or lower for more than 24 h. Fewer ice packs are necessary, according to the manufacturer, making smaller deliveries more feasible and reducing the weight of transport.
The wool and the food-grade film in the product reduce condensation and remove humidity, preventing spoilage and maintaining the integrity of cardboard cartons.
The company offers a bespoke, customised ‘fit for purpose’ solution. Users have the flexibility to use smaller cartons for transport by packing more product into the boxes with less wasted air space. More cartons can thus be fitted on to trucks.
The company offers a customer recycling program.

Riviana benefits from packaging design service
Kirk Group has launched a bespoke agency, Task by Kirk, to provide consumer brands with an end-to-end design execution service, taking package design concepts to shelf-ready printed products.
Task recently worked with Riviana to rebrand the Always Fresh line of products in just two months, halving the time from the previous process and at half the budgeted spend.
Riviana Retail Strategy Manager Georgina Vergunst said she was impressed that Task was able to handle such a difficult brief so quickly, which involved producing colour-accurate press-ready artwork for a wide range of global print partners.
“Task helped us navigate the complicated world of design to print,” Vergunst said. “It just made the whole process so much easier and they were able to take care of whatever came up.”
John Kapiniaris from Task explained that providing an end-to-end service was vital in getting products to shelf faster, which had huge financial implications given the competitive retail market, where retail shelf space was at a premium and failure to launch products on time could cost businesses.
