Faster food pathogen identification

Ensuring foods and drinks do not contain pathogenic bacteria before a product is released into the market is ideal but not always achieved. If a food is contaminated, quick, efficient pathogen detection and fingerprinting is essential in limiting the spread of foodborne disease.

Currently, detecting and subtyping pathogens are separate processes and, using standard methods, it can take up to two weeks to identify the serotype of a pathogenic Salmonella. Now, University of Georgia Center for Food Safety College of Agricultural and Environmental Sciences food scientist Xiangyu Deng has created a system that can identify foodborne pathogens in a fraction of the time taken by traditional methods.

Deng has combined the two steps through a process called ‘metagenomics analysis’.

Traditionally, the pathogen is separated from the food sample by growing the pathogen in bacterial cultures, which takes 24 to 48 hours, Deng said.

To shorten the culture process, researchers in Deng’s lab apply tiny magnetic beads coated with antibodies that pull the pathogen cells out. Then they amplify the DNA of the captured pathogen cells so they have enough DNA to sequence.

“Using a new, very small sequencing tool that’s about the size of a USB drive, we can sequence while capturing the data in real time,” Deng said.

Compared to the mainstream genome sequencer that produces sequencing data after running for a day or two, the small sequencer generates enough data for pathogen detection and subtyping in about an hour and a half, he said.

Deng tested the process on raw chicken breast, lettuce and black peppercorn samples treated with Salmonella and retail chicken parts that were naturally contaminated with different serotypes of Salmonella. In one case, a small amount of Salmonella was detected and subtyped from lettuce samples within 24 hours.

Deng’s work has been published in Applied and Environmental Microbiology.

Reducing acrylamides in heat-processed foods

Acrylamide can form when starchy foods are cooked or processed and it has been detected in a range of foods including fried or roasted potato products, cereal-based products (including sweet biscuits and toasted bread) and coffee. FSANZ recommends that exposure to acrylamide in food should be limited as the chemical is known to cause cancer in animals.

Estimated dietary exposures of Australian consumers to acrylamide in food found that the levels were generally lower than, or comparable to, those reported in previous Australian and international studies. Even so, the results were in the range of those considered to be of possible concern to human health by the WHO Joint Expert Committee on Food Additives.

New farming and processing techniques are being investigated to produce lower levels of acrylamide, for example, lowering cooking temperatures, using enzymes that reduce acrylamide formation and obtaining raw materials with lower reducing sugar levels. However, reducing acrylamide in some foods, such as coffee, is difficult without changing its taste.

As of 11 April 2018, new European Union legislation set new benchmark levels for the amount of acrylamide in foods for various products. Commission Regulation (EU) 2017/2158 of 20 November 2017 establishes mitigation measures and benchmark levels for the reduction of the presence of acrylamide in food.

High-heat cooking can impart potentially carcinogenic acrylamides at levels that can exceed 1000 ppb. Now Frutarom Food Protection Solutions has released an all-natural, high-antioxidant solution for reducing acrylamides in heat-processed foods, decreasing oxidation and extending shelf life.

Frutarom conducted tests on fried potatoes and other snacks applying its all-natural INOLENS 4 and SyneROX HT tailor-made formulations. Both formulations significantly reduced acrylamide concentration in the food matrices. The level of acrylamide was decreased by 60% in the snacks, and more than 90% in the fried potatoes. The research team noted that such high reduction levels are readily attainable for food applications that have very high levels of acrylamide.

The two formulations also improved oxidative stability of snacks and fried potatoes, as indicated by hexanal levels. The performance of INOLENS 4 and SyneROX HT exceeded that of the synthetic antioxidant TBHQ, which is commonly used for frying oil stability improvement.

“Using these natural formulations in baking, frying applications and other high-heat applications is an ‘all-in-one’ solution that reduces acrylamides while significantly slowing oxidation and rancidity of oils and fats and extending shelf life,” said Ohad Cohen, GM for Frutarom Food Protection Solutions.

INOLENS and SyneROX are customised blends of rosemary oil and/or water-soluble extracts in powder and liquid forms and have no impact on flavour, texture or appearance.

Air Products’ Freshline LIN-IS system, which uses liquid nitrogen to deliver rapid, precise temperature control to a blender or mixer/grinder, enables food manufacturers to optimise processing speed and product quality. It takes packaging designers, marketing professionals, environmental managers and anyone who understands their packaging 30 min to complete an assessment.

The tool also includes streamlined product life cycle assessment to allow a fully integrated analysis of product with its packaging.

Using a life cycle assessment methodology, the tool assesses the environmental impacts and resource consumption profiles of different packaging options over the whole product life cycle.

It can be used to measure and improve packaging’s environmental performance by: identifying hotspots throughout the supply chains; benchmarking design options and improvements; using multiple indicators and outputs for internal and external reporting; communicating environmental benefits; and building capacity in teams to integrate sustainability into the business.

The product is customisable for repeat inputs such as transportation and materials, has multiuser management functionality and takes into account the impact of wasted product, highlighting the role of packaging in preventing product waste.

Woolcool insulated packaging for temperature-sensitive goods

Woolcool is an environmentally responsible insulated packaging product. Made of 100% sheep’s wool, a renewable resource that is biodegradable, sustainable and compostable, it can be used for transporting temperature-sensitive goods such as food, beverages, veterinary and human pharmaceuticals.

It comes flat-packed and reduces damaged goods due to the cushioning effect during transport.

The product keeps chilled items at the critical 5°C or lower for more than 24 h. Fewer ice packs are necessary, according to the manufacturer, making smaller deliveries more feasible and reducing the weight of transport.

The wool and the food-grade film in the product reduce condensation and remove humidity, preventing spoilage and maintaining the integrity of cardboard cartons.

The company offers a bespoke, customised ‘fit for purpose’ solution. Users have the flexibility to use smaller cartons for transport by packing more product into the boxes with less wasted air space. More cartons can thus be fitted on to trucks.

The company offers a customer recycling program.

Riviana benefits from packaging design service

Kirk Group has launched a bespoke agency, Task by Kirk, to provide consumer brands with an end-to-end design execution service, taking package design concepts to shelf-ready printed products.

Task recently worked with Riviana to rebrand the Always Fresh line of products in just two months, halving the time from the previous process and at half the budgeted spend.

Riviana Retail Strategy Manager Georgina Vergunst said she was impressed that Task was able to handle such a difficult brief so quickly, which involved producing colour-accurate press-ready artwork for a wide range of global print partners.

John Kapiniaris from Task explained that providing an end-to-end service was vital in getting products to shelf faster, which had huge financial implications given the competitive retail market, where retail shelf space was at a premium and failure to launch products on time could cost businesses.

“This also runs the risk of your product being replaced by your competitor’s products or private label, with the long-term issue of having to renegotiate new shelf space, with no guarantee your products will get back on the shelf,” he said.

Task by Kirk’s graphics specialists can advise on design suitability for printing, with the final design then rolled out across all product lines and sizes, drawing on their print expertise to ensure artwork is accurate and print-ready first time.
