Increased scrutiny of milk powder and infant formula production plants has seen the need for higher levels of both cleaning and hygiene.

One of the most critical parts of the production process is the spray dry nozzle system. Spray dry nozzles are precision components and small in size. Nozzles that are not properly maintained can affect powder quality and cause unnecessary contamination. The components can suffer damage during operation and cleaning. Build-up of burnt liquid inside the cap chamber, outer edges of the cap or near the threads is a common problem.

The Seal Tick TSE6086b tests flexible packages for leaks and gives go/no-go answers independent of the operator. It can find holes as small as 10 µm in diameter. Swedish Culinary Team partners with Baltic cruise company

Gastronomic delicacies and high-quality food are an important part of the travel experiences offered by Finnish cruise company Viking Line. A variety of theme weeks have added flavour, along with celebrity chef partnerships and new onboard restaurant experiences.

Recently, a long-term partnership was launched with the Swedish Culinary Team, which competes in cooking competitions around the world. The partnership aims to develop taste experiences on the company’s seven vessels, which cruise between Finland, the Aland Islands, Sweden and Estonia. The Swedish Culinary Team will create brand new food concepts, provide restaurant and kitchen staff with continuing training and make guest appearances onboard.

Altogether there are nearly 40 restaurants and cafes onboard Viking Line’s vessels, offering everything from traditional buffets and homemade pastries to seafood platters, fine dining options and innovative tasting menus. The Swedish Culinary Team comprises 12 chefs and pastry chefs who, under the direction of team captain Fredrik Andersson, have successfully represented Sweden in international culinary competitions. Next in their sights are the Culinary World Cup 2018 and the Culinary Olympics 2020.

PosiClean is a positive drive replacement for plastic modular belts in the protein processing industry, with sealed Kevlar tension members to eliminate belt stretch and a tooth construction that extends across the full belt width for better torque distribution.

The belts can be cleaned in place, saving labour, water and wastewater disposal, when compared to plastic modular belting, according to the company.

Marelec Portio portion cutters

The Marelec Portio portion cutter is suitable for fresh products such as fish fillets, whole fish, meat and poultry products. Different knife types and product fixation systems can be chosen to different product types.

A product is fed on the infeed belt. A three-dimensional laser scanner then calculates its volume. A preset weight and shape frame is selected from the program menu. The portion computer then calculates where to cut.

The main difference between the Portio 1 and Portio 3 are the number of cameras. The Portio 1 has one camera and is suitable for flat products, whereas the Portio 3 has three cameras and is able to properly scan rounded products.

For products exceeding certain dimensions, both machines can be equipped with 300 or 350 mm belts rather than the standard 254 mm width belt.

An optical checkweigher can optimise the precision with changing product characteristics.

The machine can be completely opened for easy cleaning and the belts can be taken out for separate cleaning.

For maintenance, easily obtainable spare parts have been selected. All motors and encoders are situated away from the wet area.

Busch Vacuum Pumps’ R 5 RD vacuum pumps require 20% less motor power than comparable models, according to the company.

Designed for the vacuum packaging of foodstuffs, the pumps can be easily cleaned because the surfaces are smooth, the oil lines are only on the inside and the housing has no cooling fins. Maintenance has been reduced as all of the maintenance elements are attached to an operating side, and only one single air/oil separator must be changed.

An oil/water heat exchanger on the rotary vane vacuum pump can reduce waste heat and thus reduce the energy costs for air conditioning. Furthermore, the heat exchanger can be used to generate warm water, which can in turn be used as warm water during operation. The vacuum pumps can be retrofitted with heat exchangers.

Packaging processes can be designed more economically through the use of intelligent technologies for the vacuum supply — from an optimised control system, to frequency control, to the use of a vacuum container.

Centralised vacuum systems are suitable for companies that package foodstuffs on several thermoforming packaging machines, tray sealers or chamber machines. Centralisation can reduce energy costs by 50% or more because fewer vacuum pumps are required. Performance control can also be adjusted to fit the requirements of overall operations. Safety is enhanced because if a vacuum pump fails or needs maintenance work, full vacuum power remains intact.

Sealed Air sells Diversey to Bain for US$3.2 billion

Creating a new hygiene and cleaning solutions company, Sealed Air has sold its Diversey Care division and its food hygiene and cleaning business to Bain Capital Private Equity for around US$3.2 billion. The sale is expected to be finalised in the second half of 2017. In 2016 the combination of Diversey Care and related food hygiene businesses generated approximately $2.6 billion in net sales.

The newly created company, which is to be called ‘New Diversey’, will employ about 8600 people across the globe, integrating chemicals, floor care machines, tools and equipment with a wide range of technology-based value-added services, food safety services, and water and energy management.

Already-initiated growth strategies, including the ‘Internet of Clean’, robotics and AHP disinfection technologies, are expected to be continued by New Diversey as the company seeks to drive further expansion and improved profitability.

Quark arrives in Australia

Described as a fresh dairy product made with a blend of cheese and yoghurt cultures, quark is a diet staple in Sweden and other parts of Europe and has been making its mark in the US.

Australia’s first quark yoghurt has now been launched in Woolworths Supermarkets. Rokeby Farms Quark Yoghurt is naturally high in protein and calcium, and low in fat and sugar.

The quark’s producer, MADE (whose brands include Cocobella coconut water), says the product is made the authentic Swedish way, by culturing fresh milk at a lower temperature for longer to create a quark yoghurt that is naturally rich in protein and mild in flavour. Using a cold filtration process increases the natural protein by three times, giving the yoghurt a thick, creamy texture at only 1% fat.

Each 170 g tub of the quark yoghurt contains up to one-third of daily protein needs and over half the RDI of calcium. It will be marketed to segments including active adults, sportspeople, children, growing teenagers and the elderly.

MADE co-founder Luke Marget said: “The texture is smooth but thick — thicker than Greek yoghurt, in fact — but with a milder taste. This makes it great on its own or with cereal for breakfast, spreading in sandwiches as a nutritious replacement to cheese or a healthy substitute for cream or cream cheese in cooking.”

Rokeby Farms Quark Yoghurt is available in four varieties: Natural, Vanilla, Strawberry and Coconut.

Huhtamaki Foodservice Europe-Asia-Oceania has introduced Adtone, a single-use paper cup with digitalised connection, for use in smart device-centred promotional campaigns.

The cup comes with a heat-activated thermocromic label and a QR code with a programmed link to the customer’s website. The unique QR codes are controlled with special digital data management software, turning the coffee cup into truly smart packaging.

Consumers interact with a coffee cup for several minutes at a time and pay attention on what is printed on it. Thermosensitive printing keeps the code hidden until usage, safeguarding the promotional content for the customer until purchase of the beverage.

When a hot drink is poured into the Adtone cup, the heat activates the thermochromic printing on the label, revealing the unique QR code. By scanning the code with a mobile device, the customer can access the promotional website and the associated digital content.

The smart code management software ensures that each promotional code can only be used once and dynamically changes the digital content after use. The cups enable cafes and restaurants to run a variety of campaigns, from loyalty rewards to prize-winning promotions. It is also a tool for joint promotions and digitalised media content.
